Recipe of the Day: Mushroom Spinach Baked Eggs


This recipe is my favorite one.

Mushroom Spinach Baked Eggs

2 tablespoon olive oil, plus more for brushing

1 small onion, chopped

1/2 pound mushrooms

salt and pepper, ( i use herbal mix salt )

7 cups baby spinach

6 slices potato bread, lightly toasted

6 large eggs

1/2 cup milk

1/4 cup shredded cheddar cheese

 

Heat the olive oil in a large skillet over medium high heat. Add the onion have and cook stirring until golden, about 8 minutes. Add mushrooms and cook undisturbed, until brown about 2 minutes. Add salt and pepper cook for 4 minutes longer. Stir in spinach and cook until wilted about 2 minutes. Remove from heat and let cool. Brush a 9×13 inch baking dish with plive oil. Arrange the bread in the dish in a single layer with edges slightly overlapping, then spoon the mushroom spinach mixture on top. When ready to bake , preheat the oven to 350 degrees,. Crack an egg onto each piece of bread, pour the milk evenly over the top and sprinkle the cheese \. Bake for 25 to 30 minutes or until the whites are set.
