Food Recipe of the Day: It’s better than Potato Salad


This recipe is good if you want a change from using potato’s.

1 cup uncooked rice

2 cups mayonnaise

2 cups sliced celery

1 medium onion, finely chooped

4 tsp. prepared mustard

1/2 tsp. salt

4 hard boiled eggs, chopped

8 radishes, chopped

1 cucumber, chopped pealed if like

1 tomato diced

1 green pepper, chopped

Cook the rice according per package than chill it. In a large bowl combine the mayonnaise, celery, onion, tomato, green pepper, mustard, and salt. Add the rice and stir in the eggs, radishes, and cucumbers just before serving. Makes around 6 to 8 servings.
