Food Recipe of the Day: Sam-wiches cookies

Sam-wiches cookies

1/2 c. butter or margarine

1 c. sugar

1 egg

1 tsp. vanilla

1 1/4 c. unsifted all purpose flour

1/2 c. Hershey’s cocoa

1/4 soda

1/4 salt

Cream butter, sugar, egg and vanilla until fluffy. Mix flour cocoa, baking coda, and salt, then add to creamed mixture. Shape dough into two a 1/2 inch thick rolls. Wrap in wax paper and chill for several hours. Cut in 1/8 inch slices, than place on a ungreased  cookie sheet. Draw lines with tines of a fork across each slice. Bake at 375 for 8 to 10 minutes or until almost firm. Place on a wire rack to cool. Spread bottom of 1 cookie with 1 tablespoon of creamy filling, then top with second cookie.


Creamy Filling

2 1/2 c. confections sugar

1/4 c. butter or margarine

2 tablespoon  milk

1 tsp. vanilla

Combine ingredients in a small bowl, beat until spreading consistency. You can divide filling in half tint 1/2 half pink and other half green or color of your liking. Also you can add strawberry extract to the pink filling and mint extract to the green.
