Food Recipe of the Day: Stuffed Salmon

Stuffed Salmon

1 4lb. dressed salmon

2 tsp of herb of salt or Mrs Dash salt free

3 Tbs. finely chopped onion

3/4 c. finely chopped celery

6 Tbs. melted butter or olive oil

Dash pepper

1 tsp. thyme

2 c. fine bread cubes

2 Tbs. chopped parsley

1 crushed clove of garlic

Lemon slices

Wash salmon and dry with paper towel. Sprinkle inside and out with 1 tsp salt or Mrs Dash salt free. In a frying pan cook onion, garlic and celery in 2 Tbs. olive oil until tender. In a bowl combine onion, garlic, celery mixture, bread cubes, thyme, pepper, parsley and remaining salt. Stuff fish with mixture. Brush fish with remaining olive oil. Secure opening with skewers. Bake at 325 for 50 to 60 minutes until fish flakes easily with a fork. Place fish on platter and remove skewers, garnish with lemon slices.
