Food Recipe of the Day: Chocolate Fudge Cake


Chocolate Fudge Cake

3/4 c. Cocoa

1/2 c. sugar

1/2 c. water

1/4 c. shortening

1/2 c. butter or margarine

1 1/2 c. sugar

3 eggs

1 tsp. vanilla

1 1/3 c. unsifted all purpose flour

1 tsp. baking soda

2/3 c. milk

In a saucepan combine cocoa and 1/2 c. sugar, add water and shortening. Cook over low heat, stirring constantly, until shortening is melted and sugar is dissolved. Remove from heat and cool. Cream butter with 1 1/4 c. sugar in a large mixing bowl. Add eggs one at a time, beating after each addition, Add vanilla. Combine flour and baking soda, Add milk to cream mixture. Blend in chocolate mixture. Pour into a greased and flour 13x9x2 inch pan. Bake at 350 for 35 or 40 minutes, or until toothpick come out clean.

Frosting:

1/2 c. butter or margarine

1/2 c. cocoa

3 2/3 c. confectioners sugar

6 Tbs. milk

1 tsp. vanilla

Melt butter over low heat in a small saucepan. add cocoa. Cook until, stirring constantly until mixture begins to boil. Remove from heat, pour in to a small bowl. Add confectioners sugar with milk. Beat to spreading consistency, blend in vanilla.
