Baked Haddock with Tarragon & Sour Cream

2 LB. haddock fillets

2 scallions with tops, minced

2 Tablespoons olive oil

1 c. dry white wine

Salt & pepper to taste

1 c. sour cream

1 tsp. tarragon



Preheat oven to 425 degrees. Place the haddock in a buttered shallow baking dish. In a saucepan, saute the scallions in olive oil until tender. Add the wine. Pour the scallions, olive oil, and wine over the fish. Season with salt & pepper. Bake until the fish flakes ( about 20 minutes ). In a small saucepan on low heat, warm the sour cream with the tarragon and pour over the fish. Sprinkle with paprika and serve.
