1 c. dried Lima beans or 3 c. cooked beans of any kind
2/3 c. bread crumbs
2 Tbs. shorten ( can use bacon fat)
1/2 tsp. sage
salt and pepper
Pick over and wash beans, cover with water and let soak over night. Drain, cook in boiling water unti tender, then force through a strainer. Add remaining ingredients, shape into the form of sausages, roll in crumbs, egg, and crumbs again. Saute until brown. Serve with tomato sauce. This recipe makes 6 to 8 sausages, about 3 inches long and 3/4 of a inch long. It should be accompanied by some milk, egg, or cheese dish.
