Curried Cream of Zucchini Soup

1# zucchini, about 1 medium

2 Tbs. butter or margarine

1 garlic clove, minced

2 Tbs. finely chopped onion

1/2 tsp. salt

1 to 2 tsp. curry powder

1 cup chicken broth

1/2 cup milk or half and half

Chives and parsley, chopped

Wash, then slice the unpeeled zucchini. Cook in the butter with garlic, onion, salt, and curry powder until soft, about 20 minutes, do not brown. Pour in a food processor with chicken broth and process unti smooth. Add milk and heat but do not boil. Serve hot or chilled. Garnish with chopped chives and parsley.
