Food Recipe of the Day: Honolulu Chicken


Honolulu Chicken

 

1/4 c. all purpose flour

1/4 tsp. salt

dash of pepper

1 chicken cut up

oil

1 ( 10 oz. ) jar peach preserves

1/2 c. barbecue sauce

1/2 c chopped onion

2 Tbs. soy sauce

1 large can water chestnuts, drained and sliced

1 green pepper, cut in strips

Hot cooked rice

 

In a large bowl, combine flour, salt, and pepper. Coat chicken with seasoned flour. In a large skillet, brown the chicken in a small amount of oil, drain. In a separate bowl, combine the preserves, barbecue sauce, onion, and soy sauce than pour mixture over chicken. Cover and simmer for 40 minutes, or until the chicken is tender. Add the water chestnuts and green pepper during the last 10 minutes of cooking. Serve with the rice.
