Oriental Chicken with Peaches

8 pieces of chicken

1 can sliced peaches in heavy syrup

2 Tbs. butter

1 Tbs. cornstarch

1 tsp. grated fresh gingerroot

1 c. cashews

Clean chicken and dry. In a large fry pan, cook chicken in hot butter over medium heat until tender. Remover chicken and keep warm. Add water to reserved peach syrup to make 3/4 c. ,  stir in cornstarch and gingerrot in peach juice. add to pan and cook and stir until sauce thickens.   Add peaches and cashews and heat through. Spoon peaches and sauce over the chicken and serve with rice.
