Freezer Peach Pancakes
Peaches will add sweetness without adding refined sugar. You can keep a stack in your freezer for some quick breakfacts.
1 c. whole wheat pastry flour
1 1/2 tsp. baking powder
2 Tbs. wheat germ
2 Tbs. all fruit peach preserves
1/2 tsp. vanilla extract
2 egg whites
1 c. skim milk
1 peach or 2 plums, pitted and finely chopped
In a medium bowl, combine flour, baking powder, and wheat germ. In another medium bowl, combine remaining ingredients. Add to the dry ingredients and use a large spatula to combine well, about 12 strokes, Do not over mix.
With a non stick pan and non stick spray, heat on medium heat , drop by 2 Tbs. of batter and cook until bubbles appear on top. About 3 minutes. Than flip and cook about 3 minutes more.
To make waffle batter, use 1 2/3 c. skim milk.
For a great tasting pancake topping, combine 1/3 c. vanilla or peach low fat yogurt sweetened with maple syrup. For a interesting texture, place toasted sesame seeds or silvered almonds in the pan and pour the batter over them.
