Food Recipe of the Day: Prune Cake


Prune Cake

2 c. flour

1-1/2 tsp. cinnamon

1/2 tsp. nutmeg

1/2 tsp. allspice

1/4 tsp. cloves

1/2 c. shortening

3 eggs

1-1/2 c. stewed chopped prunes

1 tsp. soda

1 tsp baking powder

1/2. tsp. salt( omit the soda,baking powder salt if you are using self rising flour)

1-1/2 c. sugar

1 c. sour milk

1 c. nuts ( optional)

Cream shortening. Add sugar, mix well. Add well beaten eggs. Sift flour once before measuring spices to flour. Mix all together with the milk. In a small pan heat the prunes in about 1/4 c. of  water, drain save juice. Stir in prunes and nuts . Use a 2- 1/2 x 5x 13 inch pan. Bake at 250 degrees for 35 minutes.

Just before it is done, make sauce.

Mix in pan

1/2 c. buttermilk

6 Tbsp. butter or 3/4 stick margarine

1 c. sugar

1/4 c. reserve prune juice

1/2 tsp. soda

Cook mixture until it forms soft ball. With a fork stab holes on top of hot cake, and pour over hot cake.
