Food Recipe of the Day: Pineapple Nut Bread

Pineapple Nut Bread

2 c. flour

1/2 c. sugar

1 tsp. baking powder

1/2 tsp. salt

1 egg, beaten

1 tsp. vanilla

2 Tbsp. melted shortening

1 cup crushed pineapple

1 tsp. baking soda

1 cup raisins

1/2 cup chopped nuts

Sift together the first 4 ingredients. Add raisins and nuts to sifted flour mixture. Add the teaspoon of soda to 1 cup of undrained crushed pineapple to dissolve. Stir all ingredients together just until blended. Pour into a 8x4x4 inch loaf pan. Bake at 350 degrees for about 1 hour or until done.
