Food Recipe of the Day: Christmas Cake


Christmas Cake Has always been my favorite cake.

Christmas Cake

1 lb. butter

1 lb. white raisins

1 lb. pecans

4 c. flour

2 c. sugar

6 eggs

2 tsp. lemon extract

1 pkg. mixed fruit

Dredge raisins, pecans, and mixed fruits with 1 cup of flour. Cream butter. Add sugar gradually and beat until light and fluffy. Add 1 egg at a time and beat thoroughly after each addition. Add the lemon extract, flour raisins, pecans and mixed fruits. Mix and pour into tube pan greased and lined with wax paper. Bake in a very slow oven at 300 degrees for 1 hour and 45 minutes.
