Golden Fruit Cake
2-1/2 c. flour
1/2 tsp salt
4 tsp baking powder
1 c. sugar
1/2 c. orange juice
1 tsp. vanilla
1 pound seedless raisins
2 c. candied cherries, 1 red and 1 green
1-1/2 c. candied pineapple, about 1/2 lb.
1 lb. Brazil nuts
2 c. pecans
Combine fruits and nuts in a large bowl and set aside.
Sift flour, salt, and baking powder. Beat eggs light and lemon colored.
Add sugar gradually, beating constantly.Add dry ingredients alternately
with orange juice to egg mixture. Stir in the vanilla. Fold batter over
fruit and pour into 2 waxed paper lined 9x5x3 inch loaf pans.
Bake in a slow oven at 300 degrees for about 1-1/2 hours. Cool on rack
for 5 minutes, remove from pan. Cool and remove waxed paper.
Glaze with heated white Karo than decorate with candied fruit
