Food Recipe of the Day: Currant Chutney

This recipe is great with chicken, pork, turkey, fish.

Currant Chutney

2 cups fresh red currants
2 cups chopped green tomatoes
2 cups chopped tart apples
1 cup chopped onions
1/2 cup honey
1/2 cup cider vinegar
2 tps minced fresh garlic
2 tsp brown mustard seeds
1 serrano pepper, minced ( wear gloves for them )
1 tsp grated fresh ginger root
1 lime

Combine in a large saucepan, currants, tomatoes, garlic, mustard seed, peppers, 1/2 cup water, vinegar,
apples,onions,honey, and ginger. Bring to a boil over medium high heat.
Slice the lime into 4 lengthwise wedges. Cut each wedge into thin slices. Add to saucepan. Reduce heat
to medium low, simmer mixture for 15 to 20 min. Until apples are tender and mixture thickens slightly.
Cool, that refrigerate in a covered container several days for flavor to develop.
Can be frozen for several months.
