1 ( 10 oz. ) package frozen chopped Spinach thawed
1 medium sweet onion diced
1/2 pint heavy whipped cream
4 ( 4 to 6 oz. ) salmon filets
3/4 c. orange juice
1/4 c. white cooking wine
Salt, pepper and garlic powder to taste
Thoroughly strain thawed spinach. Saute onion in butter until caramelized, then add spinach and heavy whipping cream, stir well. Add salt, pepper and garlic powder to taste. Heat completely until cream has reduced. Combine orange juice and wine, then pour over salmon in a baking dish. Bake at 450 degrees for 7 to 10 minutes until salmon is light pink in the middle. Drain orange juice mixture to serve spinach mixture on a plate. Then serve salmon over spinach.
