Sweet Potatoes on Pineapple Rings
2 c. mashed sweet potatoes
3/4 c. brown sugar
4 Tbs. melted butter
1/4 tsp. nutmeg
1/4 tsp. cinnamon
1 can sliced pineapple rings, drained
Combine potatoes, brown sugar, butter, cinnamon, and nutmeg, blend well. Put pineapple on a baking sheet. Using a large ice cream scoop, top each ring with a scoop of the potato mixture. Top with maraschino cherry. Bake at 400 degrees for 10 minutes.
Note: Lightly spray the scoop with oil before making each potato mound.
