Food Recipe of the Day: Pilgrim Pumpkin Pie

Pilgrim Pumpkin Pie

1 9 inch piecrust
1 16 oz. can pumpkin ( 2 cups )
1 13 oz. can evaporated milk
2 eggs
1/2 c. packed brown sugar
1 1/2 tsp. cinnamon
1/2 tsp ginger
1/2 tsp. nutmeg
1/2 tsp allspice
1/2 tsp. cloves
1/2 tsp. salt
About 3 hours ahead or early in the day; Prepare piecrust with fluted edges, refrigerate. Preheat oven to 425 degrees. In a large bowl, with mixer at medium speed, beat pumpkin with ingredients until well mixed. Place pie plate on oven racks and pour mixture into piecrust, bake 15 minutes, turn oven down to 350 degrees and bake for 35 minutes more or until filling is set . Cool Serve with whipped cream.

For honey nut pumpkin pie; Prepare as above. Just before serving, spread 1/3 c. honey over top, sprinkle with 1/3 c. sliced Brazil nuts, almonds, filberts, peanuts, pecans or walnuts.
