Food Recipe of the Day: Ginger Turkey Stir Fry

Here is a great recipe to use left over turkey;

Ginger Turkey Stir Fry

2 c. boiling water
1/3 c. water
2 Tbs. honey
1 Tbs. reduce sodium soy sauce
3 Tbs. cornstarch
2 c. carrots, sliced diagonally
2 c. mushrooms, sliced
1 can ( 8 oz. ) water chestnuts, drained and sliced
1 Lb. turkey, light or dark, cut into strips
1/2 tsp. ginger
1 c. cracked wheat bulgur
2 Tbs. fresh lemon juice
1 Tbs. oil
1 large cove of garlic, minced
2 c. broccoli

Pour boiling water over cracked wheat and let stand for 1 hour, drain and set aside. Combine water, lemon juice, honey, ginger, soy sauce, and garlic. Dissolve corn strach in mixture, set aside. Heat oil over high heat in wok or large skillet. Add carrots, stir fry 3 minutes or until tender crisp. Add broccoli, mushrooms,and water chestnuts, stir fry about 2 minutes more. Remove from pan. Stir fry turkey until lightly brown. Add sauce and cook, stirring constantly, until thicken and translucent. Add vegetables, heat through. Sever over cracked wheat, or rice, or Chinese noodles.
(Cracked wheat bulgur has a nut flavor if you can find it.)
