Food Recipe of the Day: Beef Roll Ups

Beef Roll Ups

1/2 c. chopped onions
2 Tbs. butter
1 c. finely diced carrots
1 c. finely diced potatoes
1 can mushroom soup
2 Tbs. chopped parsley
1/2 tsp. dill weed
4 cube steaks or 1 1/2 Lb. round steak
Salt and pepper to taste
2 Tbs. shortening
1 medium size can tomatoes, cut up
1/2 glass white wine

In a large saucepan, saute the onions in the butter. Add the carrots, potatoes, half of the soup, parsley, and 1/4 tsp. of dill weed. Cook until partially tender. Season the meat with salt and pepper. If you’re using round steak, cut it into 4 or 5 pieces and flatten. Place the stuffing in the center of the meat. Roll up, tuck in the ends, and skewer with toothpicks. Melt the shortening in a skillet and brown roll up on all sides. Remove the excess fat. Stir in remaining soup, the rest of the dill weed, tomatoes, and remaining stuffing. Simmer for about 1 hour, but stir frequently. Add the white wine and simmer for 15 minutes longer.
