Food Recipe of the Day: Baked Scallops


Baked Scallops

igredients:
1/4 c. garlic bread crumbs
2 tsp. margarine
2 Tbs. all purpose flour
1/4 tsp. Mrs Dash table blend or salt
1/8 tsp. ground red pepper
1 1/2 c. milk
1 Lb. scallops, rinsed, drained, and patted dry
1/2 Lb. mushrooms, sliced
3 scallions, sliced
2 Tbs. chopped fresh tarragon or 2 tsp. dried

directions;
Preheat oven to 400 degrees. Placed 4 small baking dishes ( 8 oz. each ) on a baking sheet. Coat the dishes with cooking spray. In a small bowl, combine bread crumbs and butter. Toss to mix. Set aside. Place the flour, salt, and pepper in a saucepan. Gradually whisk in the milk until blended. Cook stirring often over medium heat for 5 to 7 minutes until thickened. Add egg yolk.Cook stirring constantly for 2 minutes or until mixture bubbles. Meanwhile coat a medium nonstick skillet with cooking spray and place over medium heat. Place the scallops in the skillet. Cook stirring for 2 to 3 minutes or until opaque. With a slotted spoon transfer the scallops to the saucepan. Dry the skillet with a paper towel, coat with cooking spray, add the mushrooms. Cook stirring occasionally for 2 to 3 minutes until mushrooms are soft. Add to saucepan and stir to combine. Spoon the mixture into prepared baking dishes, sprinkle with the bread crumbs. Bake for 6 to 8 minutes or until golden and bubbly.
