In Pennsylvania Dutch country this is a dish that is served as a complete meal. Usually served with skim milk.
1 pie pastry
4 medium baking apples, whole, peeled, cored
1/2 c. brown sugar
1/2 tsp. cinnamon
1/2 tsp. grated lemon juice
2 tsp. margarine
1 package of vanilla instant pudding
Roll the pastry in a large square and cut into 4 smaller squares each large enough to enclose the apple. Combine the sugar, cinnamon and lemon juice. Place an apple on each square of dough and fill the cavity with the sugar mixture. Dot with butter. Gently bring up opposite corners of the square to enclose the apple. Pinch together, using a little water. Tuck edges in as though wrapping a package, bring remaining 2 corners of dough together at the top of the apple, press together to seal. Place dumplings in a shallow baking pan and bake 250 degrees, for about 30 minutes. Mix vanilla pudding thin, not thicken. When apples are baked add a scoop of pudding over dumpling over it and serve warm.
