This is my favorite fish. It has been used a lot in our family. I come from a fishing family and love to fish.
1/4 c. olive oil, or oil of your choose
1 1/2 lbs. firm textured fillets as haddock
1/2 tsp. sugar
1/2 tsp. ginger
1/4 tsp. garlic powder
1 Tbs. soy sauce
1 Tbs. sherry
Fresh ground black pepper
Chives or ends of green onions
2 Medium size ripe tomatoes, chopped
1 Tbs. chopped parsley
Dust fillets lightly with flour. In a heavy skillet heat oil and brown fish on both sides. Combine sugar, ginger and garlic with soy sauce, sherry and enough water to make 1 cup. Pour over fish, cover and braise 10 minutes. Uncover, add black pepper, chives, parsley and chopped tomatoes. Cook uncover for another 5 minutes.
