Food Recipe of the Day: Easy Lamb Curry

Easy Lamb Curry

1 Tbs. oil
3 Tbs. chopped onion
1 c. celery
1 Tbs. flour
1 tsp. curry powder
2 c. beef broth
1/4 c. catchup
2 c. diced cooked lamb
1/2 c. chopped apple ( unpeeled if color is good and skin is crisp )

In skillet saute the onions and celery lightly in oil. Stir in flour mixed with curry powder. Blend until smooth. Add broth and catchup. Simmer about 1 hour, stirring occasionally. Add cooked lamb and the chopped apple. Simmer another 20 minutes. Serve over rice.
