Food Recipe of the Day: Chicken Jerusalem

Chicken Jerusalem

2 Tbs. oil
1 2 /2 to 3 lbs fryer, cut in serving pieces
1 6 oz. jar marinated artichoke hearts,drained
1/2 lb. fresh mushrooms, cut in pieces
2 cloves garlic, minced
1/2 tsp. oregano
Freshly ground black pepper
2 c. canned or fresh tomatoes
1/2 c. sherry

Heat oil in frying pan. Dredge chicken in flour and brown in oil. Place in casserole with mushrooms and artichoke hearts. Stir garlic and spices with tomatoes, pour over chicken. Bake at 350 degrees for 1 to 2 hours, or until tender adding sherry during last few minutes of cooking time.
