Food Recipe of the Day: Pot Stickers

Pot Stickers

1 c. Chinese cabbage, finely chopped
1 tsp. salt
1 lb. lean ground pork
1 lightly beaten egg
1 slice fresh ginger, minced
3 green onions, minced
3 Tbs. soy sauce
1 tsp. cornstarch
4 drops of sesame oil
1 Tbs. dry sherry
1 Tbs. water
50 pot stickers wrappers ( won ton wrappers )
1 egg white, beaten
Peanut oil for frying
1/2 c. chicken broth ( per pan )
Soy sauce
Chinese hot oil

Combine Chinese cabbage, salt, ground pork, beaten egg, ginger, green onion, soy sauce, corn starch, sesame oil, dry sherry, and water. Place pot stickers wrapper on open press ( can do by hand ). Place a rounded teaspoon of filling on the wrapper. Brush edges with beaten egg white. Close press to seal dumpling.
Pour a thin film of peanut oil in a fry pan with a nonstick surface. Heat oil and place pot stickers in pan allowing space between each one. ( I crown them ) . Brown on both sides. Add chicken both and cover pan. Allow to steam 10 minutes. Remove cover and continue to cook until all liquid is absorbed. Serve with soy sauce and Chinese hot oil mixture- and minced ginger if you like it spicy for dipping.
