Food Recipe of the Day: Salmon and Dill Sauce

Salmon and Dill Sauce

Ingredients 1 to 1 1/2 lbs. salmon fillet
lemon juice
salt and pepper to taste
2 Tbs. flour
1 cup heavy cream
1 Tbs. dried dill
2 oz butter
2 Tbs. shallots or onions, finely minced
3 Tbs. olive oil
1 Tbs. capers

Check salmon to make sure it is fresh by smelling, if to fishy discard, if only slightly fishy it is good. Put salmon in ice cold water combined with lemon juice. Remove the skin than cut into 3 or 4 pieces and sprinkle with salt and pepper. Store in cool place until ready to cook. To cook, dredge salmon in flour, shake off excess. Heat 2 Tbs. olive oil in pan than saute salmon for 4 to 6 minutes on each side, depending on thickness. While salmon cooks, saute shallots in 1 Tbs. olive oil until transparent. Increase heat add cream, cook until liquid reaches 1/2 its volume. Just before serving add capers and dill, stir in butter to thicken sauce. Serve with sauce over cooked salmon garnish with parsley.
