Food Recipe of the Day: Ginger Chicken and Peach Saute

Ginger Chicken and Peach Saute

1 Lb chicken cutlets
3 tsp. lemon juice 1 tsp. fennel seeds, ground
1 tsp. cumin seeds, ground
1/2 tsp. curry powder
2 Tbs. minced fresh parsley or coriander
2 shallot, minced
4 tsp peanut oil
2 slices gingerroot
6 peaches,peeled and sliced
unsalted shelled pistachio nuts

Slice chicken into finger size ribbons and place in a non metal bowl. Add lemon juice, fennel, cumin, curry powder, parsley, and shallot and combine well. Marinate for an hour. In large skillet or wok, heat oil and ginger over medium high heat until fragrant. Discard ginger and add chicken mixture and marinade. Saute over high heat until chicken is almost cooked through., about 5 minutes. Then add peaches and continue to saute until peaches are heated through and chicken cooked, about 2 minutes more. Serve over rice or skinny noodles with pistachios nuts.
