Food Recipe of the Day: Maple Pumpkin Cheesecake


Maple Pumpkin Cheesecake

Ingredients:

1 Lb. low fat cottage cheese
1/2 c. plain low fat yogurt
3/4 c. pumpkin puree
1/4 c. flour
3 eggs
1 tsp. vanilla extract
1/4 c. maple syrup
1/4 tsp. pumpkin pie spice
1/2 tsp. cinnamon
1/2 tsp ground ginger
1/4 tsp. cloves
1 8 inch prepared graham cracker crust

Preheat oven to 325 degrees.
Place cottage, yogurt, pumpkin, flour, eggs vanilla, maple syrup, spices in blender,one at a time to make sure that each ingredient is combined. Blend until smooth, then pour the mixture into the crust, use a rubber spatula to spread it evenly. Place the pie in the middle of oven and bake for about 50 minutes. Let cool before serving. Store in refrigerator any left overs.
