Sauteed Chicken with Prunes and Shallot


1 Lb. chicken cutlets
2 Tbs. flour
2 tsp. peanut oil
1/3 c. chopped pitted prunes
1 Shallot, minced
2 tsp. mustard
1/4 c. apple juice
1/4 c. chicken stock

Dredge chicken lightly in flour. In a large nonstick skillet, heat oil over medium heat. Add chicken and saute until chicken is cooked through., about 5 minutes each side. Then put chicken in a heated plate. Combine prunes, shallot, mustard, juice, stock, basil in the skillet and stir to combine well. Increase the heat to high and boil the sauce, stirring and scraping up pieces from bottom of pan, until it is reduced by half, about 3 minutes. Spoon over chicken and serve hot.
1/2 tsp. dried basil
