Food Recipe of the Day: Asparagus with Mustard Sauce

Asparagus with mustard Sauce

1 Lb fresh asparagus
3 Tbs. reduced fat sour cream
2 Tbs. nonfat mayonnaise
1 tsp. prepared mustard
1 tsp. lemon juice
1/8 to 1/4 tsp. hot sauce ( optional )

Directions :
Snap off though ends a of asparagus as close to the bottom as possible. Wash asparagus, peeling the bottom if the stalks are tough. Arrange asparagus in a vegetable steamer over boiling water. Cover and steam for 6 to 8 minutes, or until crisp and tender. Transfer to serving plate. Set aside and keep warm. In a small sauce pan combine the next 5 ingredients and cook over medium heat, stirring constantly. Let mixture boil for 1 minute, stirring. Spoon over asparagus and sprinkle with paprika.
