Sauteed Cabbage with Fennel
Ingredients:
1 Tbs. olive oil
2 cloves garlic, minced
1 Tbs. fennel seeds
3 scallions, minced
4 c. shredded cabbage
2 Tbs. freshly grated Parmesan cheese
Directions:
In a very large skillet, heat oil on medium high heat. If it not a large skillet the cabbage will become mushy. Add garlic, fennel, scallions, and cabbage and saute until cabbage is cooked through but still is crunchy, about 5 minutes. Place cabbage mixture in a large serving bowl, sprinkle with Parmesan and serve hot. It can be served with grilled chicken.
