Pork Loin with Garlic & New Potatoes

2-5 Lbs. pork loin
1 cup olive oil
1/2 c. cider vinegar
3 Tbs. crushed rosemary leaves, fresh or dried
2 Tbs. garlic powder
2 Tbs. powdered ginger
2 tsp. dried sage
1/2 cup soy sauce
1/4 cup parsley
2 tsp. dried paprika
2 c. hot water
4 lbs. new red washed not peeled
2 package thawed baby onions
1/2 cup peeled garlic cloves

Set aside meat, potatoes, onions and garlic cloves. Blend all of the other ingredients together in a large roasting pan for about 4 hours be fore dinner. Marinate pork loin in mixture for 1 hour,tuning occasionally. Finish with the fat side up. Add potatoes, onions, garlic cloves and roll in the herb mixture. Spread them evenly around the pork loin. Broil for 15 minutes, Turing so all sides are brown. The vegetables will get a little brown or black in the process, the will caramelize and taste even better. Turn down oven to 350 degrees. Coat pork loin with sauce and set fat side up. Add 1-2 c. water and bake 3 hours,basting at times. Serve with pan juices, rolls, salad, and vegetable of your choose.
