Food Recipe of the Day: Curried Cherries

Curried Cherries

1 juice and pulp of lime
1 tsp. honey
1/2 tsp. ground cinnamon
1/2 tsp. ground ginger
1 tsp. curry powder
2 bay leaf
2 cups fresh sweet cherries

In a small sauce pan, combine lime juice and pulp, honey, ginger, cinnamon, curry, and bay leaves. Heat over low heat until honey becomes a liquid, then stir well to combine. Remove from heat. Rinse and pit cherries and add them, stir wet., to the saucepan. Simmer over medium heat, stirring frequently, until cherries are slightly wilted and are well coated with the curry mixture. About 5 minutes. Serve warm with roasted meats or poultry.
