This recipe is fast and healthy in mornings .
Pita Pockets with Eggs,Canadian Bacon
4 egg whites
4 oz. Canadian bacon finely chopped
1 small tomato2 Tbs. snipped fresh chives
2 whole wheat pitas
1/2 cup shredded cheddar cheese
Nonstick cooking spray
In a small bowl beat together eggs,egg whites, Canadian bacon,tomato,chives seasoning. Lightly coat a nonstick skillet with egg mixture and cook until it begins to set on the bottom and around the edges. Using a spatula,lift and fold the partially cooked eggs so the uncooked portion flows underneath. Continue to cooking about 2 minutes or until cooked through. Cut pitas in half crosswise and fill each with egg mixture. Sprinkle with cheese.
This is easy and fast in all about 20 minutes. I like it with tabasco sauce and no seasoning.
