Food recipe of the Day: Muffins For 24

This makes a fast get up and go morning.

Muffins For 24
2 eggs
1 1/2 cup milk
1 cup oil
4 cups flour
2/3 cup sugar
2 Tbs. baking powder
2 tsp. salt

Grease only bottoms of muffin cups. Beat eggs,stir in milk and oil. Combine flour,sugar,baking powder and salt,add all at once. Mix lightly only until flour is moistened,will be lumpy. Fill cups 2/3 full. Bake at 400 degrees for 20 minutes until golden brown.

Variations you can use for these muffins.
As a streusel top:Mix 1/2 c. brown sugar and 1/2 c. chopped nuts,1 tsp. cinnamon. Sprinkle on batter before baking.
Blueberry top: Stir in 2 cups fresh or frozen,(thawed,drained) with milk.
Oatmeal raisin top: stir in 2 c. raisin with the milk. Decrease flour to 2 c. and add 2 c. guick oats. Add 1 tsp. nutmeg and 1 tsp, cinnamon to flour and oat mix. Use packed brown sugar instead of white.
