Food Recipe of the Day: Banana Coins with Lime and Tangerines


Banana is a powerhouse of potassium. small bananas provide about as much fiber as a slice of whole wheat bread. Bananas contain almost no sodium,and modest source of vitamin C.It helps to lower blood cholesterol.

Banana Coins with Lime and Tangerines;
ingredients:
1 lime (juice and pulp)
2 drops vanilla extract
a pinch of cinnamon
2 tangerines(seeded and sectioned)
1/4 cup watermelon (seeded)
1 Tbs. shredded coconut

Directions:
In small bowl combine lime juice,pulp,and cinnamon. (Use a fork) In large bowl combine tangerines,bananas,watermelon,coconut.Pour lime mixture over and toss well,until fruit is well coated. I server room temperature or you could serve chilled. This recipe is great for starting the day.
