This recipe have been make many times here in my home,I prefer home made instead of box mixes.
1/2 cup wheat bran
3/4 cup whole wheat pastry flour
1 tsp.baking powder
1/2 tsp. baking soda
1/2 cup fresh or unthawed frozen blueberries
2 Tbs. frozen orange juice (concentrate)
3/4 cup buttermilk
direction: In medium bowl,combine bran,flour,baking powder,and baking soda. Add berries and stir to combine. In another bowl,whisk together orange juice concentrate,buttermilk,and egg. Add wet ingredients to dry ingredients and use a large spatula to combine. ( don’t overmix,about 10 strokes should be sufficient.) Heat a well seasoned cast iron skillet over medium heat. If you don’t have a iron skillet ,use a non stick one. When the skillet is hot ,rub a small amount of oil on the bottom. Than scoop of batter and pour on skillet. Cook pancakes until they are bubbly on top, then turn them over. (the cooing time will be about 3 minunts on each side,but will vary depending on the type of skillet you use. Place them in a warm oven while you prepare the rest. Remember to rub the skillet with oil between batches. These are delicious topped with blueberry yogurt.
