Food Recipe of the Day: Potato Frittata with Sage and Onions

This is good at breakfast or any dish of the day.

Potato Frittata with Sage and Onions

2 medium potatoes,cubed and steam
1 medium onion,chopped
1 tsp. dried sage
4 eggs,beaten
freshly grated Parmesan cheese

Directions: Preheat oven to 350 degrees. Arrange potatoes in a 9 inch pie plate,with onion and sage. Pour in eggs and bake in the middle of the oven until set,about 20 minutes. Immediately sprinkle on Parmesan. Cut into wedges and serve warm for breakfast,brunch,lunch,or with soup and salad for a light dinner.
