This recipe is a tasty dinner and easy to make.
Green Chili Pepper Chicken:
1 chicken (about 3 1/2 pounds)
Water to cover chicken
1 stalk celery, cut into pieces
1 carrot, pealed and cut into pieces
1 medium onion, chopped
1 green pepper, chopped
Cornstarch to thicken broth
1-4oz. can chopped green chiles
4 cups instant rice or cooked rice
Cut chicken into pieces, place in a stew pot and cover with water. Add celery,carrot and pepper and onion cook until tender. Remove chicken and vegetables. Strain broth and thicken with cornstarch (1 Tbs. to 1 cup liquid). Add chiles to sauce, add chicken and vegetables. Reheat chicken in sauce. Server over cooked rice.
