Food Recipe of the Day: Currant Cake

This recipe I found years ago and enjoy making i. I love currants and when I can get them use them in my salads and other things.

Currant Cake
1 cup butter
2 cups sugar
4 eggs
1 cup milk
3 1/2 cups cake flour
1/4 tsp. salt
2 tsp.cream of tartar
1 tsp.baking soda
1 Tbs. grated lemon rind
1 Tbs. lemon juice
1 cup currants
Cream butter and sugar. Add well beaten egg yolk and milk.Mix thoroughly.Sift flour,measure, and sift baking soda,salt,and cream of tartar. Add lemon juice,lemon rind, and currants which have been dredged in 2 Tbs. of four. Fold in stiffly beaten egg whites. Pour int a well oiled cake pan. Bake at 375 about 40 minutes. Cool and frost
