Always choose small or medium ones they are more desirable ones, the old or bigger ones have a woody center that has to be removed.
12 Medium or small sized parsnips
1 Cup milk
2 Tbs. flour
1/4 tsp. nutmeg
salt and pepper
Directions; Wash and scrape the parsnips, and boil them until tender. Drain and cut them into small pieces. Make a sauce of the butter,flour,milk,nutmeg,salt and pepper. Add the cooked parsnips and serve hot.
