My Aunt Opal, made this years ago, she was a 4 H teachers,quilter, sewer among other great talents. Mother to me as well. when my Grandmother was too busy. I kind of think it was to give my Grandmother a break for me.
Whole Wheat Raisin Cinnamon Bread
1 egg 2 tbs. oil
2 cups hot water
2 tbs. blackstrap molasses
1 tsp. ground cinnamon
5 cups all purpose whole wheat bread mix
1 cup raisin
Directions: (Preparation, rising time, 2 hours, baking time 1 hour)
In large bowl combine egg, oil, hot water and molasses. In a separate bowl combine cinnamon, mix and raisins. Quickly beat dry ingredients into the liquid with a wooden spoon to form a soft dough. Turn onto a well floured board and knead until smooth and elastic. If dough is sticky, add more flour as needed. Shape dough into a ball and place in an oiled bowl. Oil top of dough and cover with a damp, warm towel. Place in a warm spot and allow to rise for about 45 minutes or until doubled in bulk. Punch down. Shape into 2 loaves and place in oiled bread pans. Oil the top of each loaf and allow to rise for about 1 hour until again doubled in bulk. Pre heat oven to 400 degrees. Bake at 400 for 15 minutes. Reduce heat to 350 degrees and bake for 20 to 25 minutes or longer until water sizzles when sprinkled on the bottom of the pan and bread slips easily from it.
