3 pounds fryer chicken cut up and skinned
2 Tbs. soy sauce
1 Tbs. olive oil (or oil of your taste)
1 Tbs,chili sauce
2 Tbs. juice from drained apricot
1/2 tsp. ground ginger
1/8 tsp. ground pepper
1 can(16 oz.) apricot halves in juice,drained
Heat oven to 375 degrees,remove excess fat from chicken. Put chicken meaty side up, in a 13x9x2 inch pan.Mix ingredients except apricots,brush over chicken turning pieces to coat. Bake uncovered brushing with soy mixture occasionally, until thickest pieces are done, about 50 to 60 minutes. About 5 minutes be for chicken is done arrange apricots around chicken brush with soy mixture. Bake until apricots are hot, about 5 minutes.
