Herbed Cornish Hens
3 cornish hens(about 1 pound each)
1 cup herb-seasoned croutons
1/4 cup sliced ripe olives
2 tbs. lemon juice
2 tbs. vinegar
1 tbs. vegetable oil or olive oil
1 tsp.dried thyme
1 clove garlic,crushed
Heat oven to 350. Dry cavities of hens 9Do not rub cavities with salt) Mix croutons and olives,stuff each hens loosely with 1/3 cup stuffing.Fasten openings with skewers or string. Place hens ,breast sides up,in shallow pan. Mix remaining ingredients, pour over hens.
Roast uncovered until hens are done,spooning lemon juice every 20 mins., bake for about 2 hours.
