1 large onion
2 cloves garlic
1 green bell pepper
1 red bell pepper
4 tablespoons olive oil
4 large tomatoes
1/2 teaspoon dried thyme
1/2 teaspoon dried oregano
3/4 pound tofu
1/2 teaspoon turmeric
Slice the onion thinly, mince the garlic cloves, and thinly slice the bell peppers.
Sauté the above in the oil until tender but not brown.
Peel and chop the tomatoes. Add them to the pan along with the herbs and seasoning.
Cook, stirring occasionally, for about 10 minutes.
Mash the tofu with the turmeric and add to the pan. Cook for several minutes more, stirring frequently, until the mix is well heated.
Serve on toast or on brown rice or with potatoes or (for an easy savory flan) in a pre-baked pie shell.
