Sunshine Blueberry Muffins:
2 cups all-purpose flour
1/3 cup sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/3 cup olive oil (or vegetable)
1 8 oz carton lemon-flavored yogurt
1 cup fresh or frozen blueberries
Preheat oven 400 degree. Fill cup cake papers . For batter,combine flour,sugar,baking powder,baking soda,and salt in large bowl.
Add blueberries,toss to coat. In a small bowl,whisk eggs and oil;blend in yogurt. Add to dry ingredients; stir untill moistened. (batter will be lumpy) Spoon batter into prepared muffin cups, filling each cup 3/4
full. Bake 12to14 min.or until golden brown. Dust power sugar over them when cool.
